Zucchini Frittata

1 tablespoon; extra virgin olive oil

2 medium (10 ounces) zucchini; thinly sliced

1/2 cup; chopped red bell pepper

2 green onions; sliced

1 clove; garlic, minced

1/2 cup; Mrs. Cubbison's Croutons

4 eggs

1/3 cup; milk

1/2 teaspoon; oregano

1/2 teaspoon; salt

1/4 teaspoon; coarsely ground black pepper

1/3 cup; shredded Parmesan cheese


  1. In medium ovenproof skillet, heat oil, add zucchini, red pepper, green onions and garlic.
  2. Sauté until tender, and zucchini begins to brown, about 5 minutes. Sprinkle with croutons.
  3. Beat eggs with milk, oregano, salt and pepper. Pour over vegetable mixture. Sprinkle with cheese.
  4. Bake at 350°F for 15 minutes or until eggs are set.
  5. Cut into wedges to serve.
