Pistachio and Apricot Stuffing

1/4 cup; butter or margarine

1 cup; chopped onion

1 cup; water

3/4 cup; apricot or peach nectar

1/2 box (6 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing

1 cup; chopped pistachio nuts

1/2 cup; diced dried apricots

1/2 cup; chopped dates


  1. Preheat the oven to 350°F. Lightly grease a 2-quart casserole dish and set aside.
  2. Place the butter or margarine in a large saucepan, and melt over medium heat. Add the onion and sauté for 5 minutes, or until soft.
  3. Add the water and apricot or peach nectar to the onion, and cook for 2 additional minutes. Add the stuffing mix and stir until well moistened, adding more water if necessary. Fold in the nuts, apricots, and dates.
  4. Transfer the stuffing to the prepared casserole dish and cover. Bake on middle rack of preheated 350°F oven for 20 to 30 minutes until internal temperature reaches 165°F.
  5. If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
