Old World Stuffing

1 box (12 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing

1/2 lb; hot smoked sausage

1/2 lb; pork sausage

1/2 lb; chopped chicken giblets

2 eggs; beaten

salt/pepper to taste

1 cup; finely chopped onion

1 cup; finely chopped bell pepper

1 cup; finely chopped celery

2 tablespoons; butter or oil

2 teaspoons; ground sage

2 teaspoons; poultry seasoning

2 teaspoons; creole seasoning

1/2 cup; dried cranberries

1 cup; dried apricots chopped

2 granny smith apples; chopped

16 oz; chicken stock


  1. Preheat oven to 350°F.
  2. Sauté vegetables in butter or oil till translucent then set aside. Sauté sausages till done, strain and set aside.
  3. Combine dressing, sausages, giblets, fruit and vegetables in bowl and add reserved stock to moisten approx 1 cup. Add salt and pepper to taste.
  4. Fold in eggs. Do not over mix.
  5. Place stuffing in a greased baking dish, and bake on middle rack of preheated 350°F oven for 40 minutes until internal temperature reaches 165°F.
