Fig-Stuffed Baked Pork Chops

4 boneless 1" thick pork chops (4 to 5 ounces each)


1/2 box (6 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing or Seasoned Corn Bread Stuffing

1/2 cup; melted butter or margarine

1/2 cup; chopped onion

1/2 cup; chopped dried figs

3/4 cup; apple juice


  • Preheat the oven to 350°F. Spray a shallow baking dish with nonstick cooking spray and set aside.
  • To make the stuffing, in a large bowl, combine the stuffing mix with the butter or margarine, onion, and figs. Gradually add the juice, blending lightly but thoroughly. Set aside.
  • Rinse the pork chops and pat them dry. Heat a large skillet over the medium heat. Brown the pork chops in the hot skillet.
  • Arrange the pork chops in the prepared baking dish, and pile the stuffing on top of the pork, evenly dividing the mixture among the chops. Then cover with aluminum foil.
  • Bake for 40 minutes, or until the pork chops are thoroughly cooked and tender, or a thermometer inserted in the chops reads at least 160°F.
