Tomatoes Au Gratin

1/2 box (6 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing

1/2 cup; butter or margarine

1 large onion, finely chopped

1 garlic clove, chopped

6 large tomatoes, thinly sliced


  • Preheat the oven to 350°F. Lightly spray a 2 1/2-quart casserole dish with nonstick cooking spray and set aside.
  • Place the stuffing mix in a medium-sized bowl and set aside.
  • Place the butter or margarine in a small skillet, and melt over medium heat. Add the onion and garlic and sauté for about 5 minutes, or until golden.
  • Pour the contents of the skillet, including the butter or margarine, over the stuffing mix. Stir until blended.
  • Layer the tomatoes and the stuffing mixture in the prepared casserole dish, beginning and ending with a layer of the stuffing mixture.
  • Sprinkle each layer of tomatoes lightly with salt as you go. Bake uncovered for 35 to 40 minutes, or until brown and crusty on top.
