Broccoli and Cheddar Stuffing Croquettes

1 pound; package frozen broccoli

1/4 box (3 oz.) of Mrs. Cubbison's Seasoned Corn Bread Stuffing

1 1/2 cups; shredded cheddar cheese

4 eggs, slightly beaten

1/4 teaspoon; garlic powder

1/4 cup; melted butter or margarine


  • Preheat the oven to 400°F. Spray a baking sheet with nonstick cooking spray and set aside.
  • Cook the broccoli according to package instructions. Drain well and allow to cool, and mince.
  • Combine the minced broccoli with all of the remaining ingredients except the butter or margarine. Then stir in the butter or margarine.
  • Using a tablespoon, shape the stuffing mixture into eight 1 1/2" ovals or cylinders, and arrange on the prepared baking sheet. Bake uncovered for 10 to 15 minutes, or until lightly browned.
