Southwest Black Bean Salad

4 cups; Baby Arugula

1 cup; Black Beans, rinsed and drained

1 cup; Grape Tomatoes, halved

1/2 cup; Red Onion, thinly sliced

1/4 cup; Fresh Gourmet Crispy Jalapeños

1 cup; Cilantro-Lime Vinaigrette

1 cup; Avocado, large dice

1 cup; Mrs Cubbison's Cheese and Garlic Croutons

2 Tablespoons; Sour cream


  • Place arugula, beans, tomatoes, onion and jalapeños in large mixing bowl; add dressing toss to mix well.
  • Remove salad to center of plate; top with avocado and croutons.
  • Top with sour cream and serve.
