Sweet Potato Corn Bread Stuffing

Ingredients

1 box (12 oz.) of Mrs. Cubbison's Seasoned Corn Bread Stuffing

1/2 cup; Sweet Potato, peeled, diced 1/4-inch

1/2 cup; Red Bell Pepper, chopped

1/2 cup; Green Bell Pepper, chopped

1/2 cup; Onions, chopped

1/2 cup; Celery, chopped

2 cloves; Garlic, chopped

2 tablespoons, Olive Oil

1 tablespoon; Butter, unsalted

1 each; Granny Smith Apple, peeled, diced 1/4-inch

1/2 cup; Pecans, chopped

1 tablespoon; Sage, fresh chopped

2 tablespoons; Brown Sugar

2 teaspoons; Creole Seasoning

2 cups; Chicken Broth

Salt & pepper to taste

Directions

  • Preheat oven to 400°F.
  • Place sweet potato, red pepper, green pepper, onion, celery and garlic in a large mixing bowl and toss with olive oil until coated; season with salt and pepper. Arrange in even layer on baking sheet pan; bake in oven for 15 minutes.
  • Remove vegetables from oven back to large mixing bowl and combine with Mrs. Cubbison's Seasoned Corn Bread Stuffing, apple, pecans, sage, brown sugar, creole seasoning, chicken broth, salt and pepper; mix until combined well.
  • Transfer mixture to medium buttered baking dish. Bake covered in preheated 400°F oven 30 minutes; uncover, and bake additional 20 minutes until lightly browned.
