Fall Harvest Cube Stuffing

1 10-ounce package of Mrs. Cubbison's Herb Seasoned Cube Stuffing

1/2 cup; Sweet Potato, peeled, diced 1/4-inch

1/2 cup; Leeks, white part only, chopped

1/2 cup; Shallots, chopped

1/2 cup; Celery, chopped

12 ounces, Cremini Mushrooms, quartered

4 tablespoons, olive oil

2 tablespoon; Butter, unsalted

4 cups; Mustard Greens, washed, stemmed, torn, blanched

1 tablespoon; Sage, fresh chopped

2 tablespoons; Parsley, fresh, chopped

2 teaspoons; Thyme, fresh

2 cups; Chicken Broth

Salt & pepper to taste


  • Preheat oven to 400°F.
  • Place sweet potato, leeks, shallots, celery and mushrooms in a large mixing bowl and toss with olive oil until coated; season with salt and pepper. Arrange in even layer on baking sheet pan; bake in oven for 15 minutes.
  • Remove vegetables from oven back to large mixing bowl and combine with Mrs. Cubbison's Herb Seasoned Cube Stuffing, mustard greens, sage, parsley, thyme, chicken broth, salt and pepper; mix until combined well.
  • Transfer mixture to medium buttered baking dish. Bake covered in preheated 400°F oven 30 minutes; uncover, and bake additional 20 minutes until lightly browned.
