Pistachio and Apricot Stuffing

1/4 cup; butter or margarine

1 cup; chopped onion

1 cup; water

3/4 cup; apricot or peach nectar

1/2 box (6 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing

1 cup; chopped pistachio nuts

1/2 cup; diced dried apricots

1/2 cup; chopped dates


  • Preheat the oven to 350°F. Lightly grease a 2-quart casserole dish and set aside.
  • Place the butter or margarine in a large saucepan, and melt over medium heat. Add the onion and sauté for 5 minutes, or until soft.
  • Add the water and apricot or peach nectar to the onion, and cook for 2 additional minutes. Add the stuffing mix and stir until well moistened, adding more water if necessary. Fold in the nuts, apricots, and dates.
  • Transfer the stuffing to the prepared casserole dish and cover. Bake on middle rack of preheated 350°F oven for 20 to 30 minutes until internal temperature reaches 165°F.
  • If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
