Pepper and Mushroom Stuffing

2 tablespoons; extra virgin olive oil

1 cup; chopped, fresh celery

1/2 cup; chopped, fresh onion

1/2 cup; finely chopped, fresh green pepper [about 1/2 medium pepper]

1/4 cup; finely chopped, fresh red pepper [about 1/2 medium pepper]

1 (10 ounce) can mushrooms, drained

1/2 box (6 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing

1 1/2 cups; plain water


  • Heat oil in a medium to large pot over medium-low heat on the top of the stove and sauté all fresh vegetables in oil until tender.
  • Add canned, drained mushrooms and stir. Add Mrs. Cubbison's Traditional Seasoned Stuffing and water, stir well, turn off burner, cover and allow to sit for five minutes.
  • Preheat oven to 375°F and prepare a two quart baking dish with cooking oil spray.
  • Fluff the stuffing, spoon into the prepared baking dish. Bake uncovered on middle rack of preheated 375°F oven for 15-20 minutes until internal temperature reaches 165°F and the top is golden brown.
  • Remove from oven, cover with foil and keep warm until serving.
