Old World Stuffing

1 box (12 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing

1/2 lb; hot smoked sausage

1/2 lb; pork sausage

1/2 lb; chopped chicken giblets

2 eggs; beaten

salt/pepper to taste

1 cup; finely chopped onion

1 cup; finely chopped bell pepper

1 cup; finely chopped celery

2 tablespoons; butter or oil

2 teaspoons; ground sage

2 teaspoons; poultry seasoning

2 teaspoons; creole seasoning

1/2 cup; dried cranberries

1 cup; dried apricots chopped

2 granny smith apples; chopped

16 oz; chicken stock


  • Preheat oven to 350°F.
  • Sauté vegetables in butter or oil till translucent then set aside. Sauté sausages till done, strain and set aside.
  • Combine dressing, sausages, giblets, fruit and vegetables in bowl and add reserved stock to moisten approx 1 cup. Add salt and pepper to taste.
  • Fold in eggs. Do not over mix.
  • Place stuffing in a greased baking dish, and bake on middle rack of preheated 350°F oven for 40 minutes until internal temperature reaches 165°F.
