Festive Fig and Bacon Stuffing

1/4 cup; butter or margarine

1 cup; chopped onion

1 cup; chopped celery

3 medium Granny Smith apples, peeled, cored, and chopped

1 cup; chopped dried figs

1/2 cup; finely chopped fresh parsley

1 box (12 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing or Seasoned Corn Bread Stuffing

4 ounces; bacon, diced and cooked crisp

2 cup; chicken broth


  • Preheat the oven to 350°F. Liberally grease a 2 1/2- to 3-quart casserole dish and set aside.
  • Place the butter or margarine in a medium-sized skillet, and melt over medium heat. Add the onion and celery and sauté for 5 minutes, or until soft. Stir in the apples, figs, and parsley.
  • Combine the stuffing mix and bacon in a large bowl. Pour the apple mixture over the stuffing mix, add the chicken broth, and stir to combine well.
  • Transfer the stuffing to the prepared casserole dish and cover. Bake on middle rack of preheated 350°F oven for 30 to 40 minutes until internal temperature reaches 165°F.
  • If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
