Cuban Style Stuffing

1 lb; Chicken Gizzards medium diced

3 cups; diced onions

1 cup; green pepper

1 cup; minced garlic

1 cup; cilantro finely chopped

1 lb; sweet butter melted

1 cup; chicken broth

1 cup; white cooking wine

1 tablespoon; ground cumin

1 tsp; oregano

12 oz; tomato sauce.

2 cups; cooked plain long grain rice.

1 tablespoon; salt

2 tablespoons; ground black pepper.

1/2 box (6 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing or Seasoned Corn Bread Stuffing


  • In a skillet sauté gizzards with the butter and vegetables till done.
  • Stir fry in the cooked rice and add broth wine and tomato sauce. Add stuffing. Adding seasonings to taste.
  • Place stuffing in a greased baking dish, and bake on middle rack of preheated 400°F oven for 25 minutes or until internal temperature reaches 165°F.
