Bacon and Scallion Stuffing

8 ounces; bacon, diced

1 box (12 oz.) of Mrs. Cubbison's Traditional Seasoned Stuffing or Seasoned Corn Bread Stuffing

1 bunch scallions, chopped

1 green bell pepper, chopped

1 cup; chopped celery

1 cup; tomato juice

1/2 cup; chopped fresh parsley


  • Preheat the oven to 325°F. Liberally grease a 2 1/2- to 3-quart casserole dish and set aside.
  • Place a medium-sized skillet over medium heat. Add the bacon, and fry until crisp.
  • Place the bacon and drippings in a large bowl. Add all of the remaining ingredients, and stir until the ingredients are well mixed and the stuffing is moistened.
  • Transfer the stuffing to the prepared dish and cover. Bake on middle rack of preheated 325°F oven for 30 to 40 minutes until internal temperature reaches 165°F. If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
